We've got a sort of fake Spring going on here in Seattle. But it's really still winter and really still cold and there really still aren't any strawberries to be had. Come on berry season!
Ooh just think about how extra sweet and juicy the berries get when they warm up a little bit in the fryer! I'm not usually a huge proponent of frying everything I can get my hands on, but a tart, crisp berry in a crispy light layer of fried batter is irresistible!
I like the move to include bits of real strawberries in the frosting on these cupcakes. I bet it's light and fluffy and not too sweet and has just the right little tart edge. If I drool on my keyboard one more time it's gonna break again.
